Why not take time to create your own easy sushi in less than 30min? Fish is usually seen as THE main ingredient in sushi, but why not replace it with wholesome produce, it’s cheap and it’s really tasty ! We decided to create this vegan, healthy and sustainable alternative to sushi to share with you guys. For two people we used:

  • 10 nori algae sheets
  • 2 carrots
  • 1 big cooked beetroot
  • 1 avocado
  • 1/2 cucumber
  • coriander
  • 1/2 baked sweet potato
  • sushi rice
  • salt
  • brown sugar
  • 50ml rice vinegar

for the quantity of rice, you can refer yourself to the instructions on the bag. Consider the fact that the rice will triple size ! You can add the vegetables and fruits that you like. For example apple, mint, other fresh herbs, cooked vegetables or tomatoes. You can even save time and make raw sushi, without the rice ! You just need to roll up a bigger quantity of vegetable, to take the rice’s place.

Preparation

Make the rice vinegar mixture. Mix up the rice vinegar, a pinch of salt and a pinch of brown sugar. Leave it aside.

Prepare the rice: Put the sushi rice in the water and bring to a boil. As soon as the water is boiling, reduce the fire and cover up the pan. Let the rice cook this way for 20min. Then, let the rice cool for 10min and add the mixture of rice vinegar, sugar and salt. Place in a big bowl and let it cool down.

Cut the vegetables in long strings.
