With a delicious yoghurt sauce, our Grilled Vegetable and Paprika Chicken Wrap, with feta cheese strips and wrapped in a wholemeal pita bread is a healthy and light fast food meal that will delight your taste buds.

Ingredients :

  • 1 wholemeal lavash or pita bread (or corn wrap)
  • ½ chicken breast
  • ½ aubergine
  • ½ courgette
  • ½ carrot
  • ¼ red pepper
  • ¼ yellow pepper
  • 1 tsp olive oil
  • 1 pinch of oregano
  • 2 tbsp lemon juice
  • ½ clove of garlic
  • 50 g plain yoghurt
  • 1 pinch of sweet paprika
  • 50 g feta cheese
  • 1 handful of spinach shoots
  • salt, pepper

Preparation : wash and thinly slice the aubergine, courgette and carrot (with a peeler or mandolin). Cut the chicken breast into strips. Fry in a pan until lightly browned on all sides. Roll in a mixture of sweet paprika and salt. Set aside. Chop, seed and slice the peppers. Peel and crush the garlic clove.  Preheat the oven grill to 200°C.

Mix the vegetables with 1 tablespoon of oil, half the lemon juice, half the garlic and the oregano. Roast the vegetables under the grill for 5-10 minutes, stirring often. Season with salt and pepper. Set aside.

Cut the feta cheese into slices. Prepare the side dish by whisking the yoghurt with the paprika, remaining garlic and lemon juice. Pour into a container. The wrap ingredients can be arranged separately in the container, or the wraps can be shaped beforehand, letting the customer add the sauce at the last moment.
