The fritatta on a salad of two cabbages with orange is a tasty treat full of vitamin C.

Ingredients :

  • 2 eggs
  • ½ red pepper
  • ½ green pepper
  • 3 dried tomatoes
  • 1 spring onion with stem
  • 1 tsp olive oil
  • 1 tbsp cornmeal
  • 2 pinches of Espelette pepper
  • 30g red cabbage
  • 30g white cabbage
  • ½ orange in pieces
  • juice of ½ orange
  • 1 tablespoon of olive oil
  • salt and pepper

Preparation: remove the seeds from the peppers and cut them into small cubes, cut the onion into rings and cut the tomatoes into small cubes. Fry the onion and the diced peppers in olive oil for 10 minutes. Add a little water and the tomatoes and cook for another 5 minutes. Add the cornmeal and 25 ml of water. Leave to cool, add the eggs in an omelette, salt, pepper and chilli. Place in a square cardboard mould. Bake for 20 minutes at 180°C to set the eggs and brown slightly.

Finely chop the two cabbages, mix with the orange juice, olive oil, salt and pepper, cut the orange segments into small pieces and place on the salad.
