One of our colleagues just spent the last week at Phuket Cleanse, a raw vegan active detox retreat in Thailand. There she got to experiment with many different green juices and soups, but also some delicious low carb salads, raw pizzas and dehydrated crackers. Back from her trip, she couldn’t stop raving to us about her amazing experience and the mouth-watering foods that she got to taste. There are many health benefits to a raw diet and it is a great way to prepare for your detox and also to slowly reintroduce solid food after a cleanse. With this Thai inspired cashew salad, we hope to bring the tropical heat and summer vibes of Phuket straight to your kitchen.


  • 1 cucumber
  • 1 carrot
  • 1 cup cashews
  • ½ red pepper
  • 2 spring onions
  • handfuls of cilantro and Thai basil

Salad Dressing

  • 1 tsp Lime Juice
  • 1 tsp soy sauce
  • 1 tsp water
  • 1 tsp vinegar
  • Honey to taste (use vegan options like agave if wanted)
  • Thai chili powder to taste


Shred or chop veggies. Mix ingredients in bowl and serve.
